31 Days to a Peaceful Holiday Season: Cranberry Sauce

Welcome to Almond Place!  I'm so happy to see so many new faces around here!  This month, I'm participating in the Write 31 Days and focusing on a ways to make our holiday season a little less stressful. You can go HERE to find all of the posts previous to this one.

Mondays are a generally easy going day on my schedule.  I don't have to work, and both boys are in school all day.  It's just Gracie and I and we use this day to get stuff done!

Mondays will be days where I review anything I haven't gotten done on my list from the previous week and where I feature a recipe for one of our upcoming feast days!

Today, we're talking cranberry sauce.

I love cranberry sauce.  I don't remember at what age I started to love it, but I would seriously eat it all the time if it wasn't so full of sugar! I indulge a couple of times a year and  thought I would share my recipe with you.

Part of our holiday traditions as a kid was me helping to make the cranberry sauce.  My mom is an awesome chef and there was nothing out of a can/box in our house....ever.  This is not a statement to make you feel bad about your canned cranberry sauce, but I want you to know there is another way and it will blow your canned cranberry loving socks off.

This recipe is SO easy that you can avoid THIS:
Cranberries do not come in this shape.

And turn these:
Perfect Cranberries!

Into about 5 minutes :-)


Here's how you do it:

Dissolve 2 cups of sugar in 2 cups of hot water.  Boil this mixture for approx 5 minutes.
Wash and pick over your package of cranberries.
Dump the cranberries into the syrup and turn down the heat just a bit.  They will plump up and start to pop.
I take my potato masher and start mushing them up a bit.  Or, once it's cooled you could run it through the blender to get any chunks out if you prefer yours smooth.
Pour into a bowl and let it will get a bit gelatinous over time.
It's served hot or cold and easily refrigerated.
You can even make this up the day before Thanksgiving or Christmas.

It's THAT simple! I can honestly say I don't know of time where I've eaten canned cranberry sauce, other than dumping a can into a crock pot roast recipe. This takes no time, kids can help, and while it has a lot of sugar, it doesn't have all the other "stuff" you get with processed food.
